Chicory is a cultivated form of chicory, also known as wild chicory, which is native to Europe, North Africa and Central Asia. Chicory beets are harvested and stored in the dark. After about 24 days, the chicory sprouts are fully grown and can be processed.. 

Chicory has only been known since the 19th century and was discovered in Belgium. Whether the sprouts were discovered by chance after the beets had been stored for a long time is unclear.. 

Ingredients

The young winter vegetable is low in calories and is considered very healthy. It is rich in potassium, zinc as well as folic acid. It also contains vitamins A, B and C. 

Chicory also contains many bitter substances, including lactucopicrin, also called intybin.
