Alfalfa (Medicago sativa L.), also known as lucerne, is a plant from the legume family (Fabaceae). It probably originates from the eastern Mediterranean region. What makes alfalfa so special?

Alfalfa sprouts are rich in essential nutrients such as vitamins A, C, E and K as well as various B vitamins. They also contain minerals such as iron, calcium, magnesium and potassium. The high proportion of chlorophyll, antioxidants and secondary plant substances make the sprouts particularly interesting for nutritional science.

Another reason why alfalfa is often referred to as a superfood is its high protein content. The fiber and enzymes it contains can also promote healthy intestinal function.
